Ingredients

1 pound of Beef

3 Garlic cloves

1 Green sweet chili

½ Onion

1 Cilantro bunch

1 pound of Barbecue chorizo

1 pound of Smoked pork ribs

2 cans of Coconut milk

2 tablespoons of Ground annatto

1 pinch of Salt

1 pound of Yuca

3 Green plantains

2 Ripe plantains

Preparation

Step 1 : To prepare this delicious dish, first wash the salted meat in plenty of water to remove excess salt, preferably a night before cooking.

Step 2 : Once done, place the beef in a large pot with plenty of water, 3 garlic cloves, green chili quartered, onion, and cilantro leaves.

Step 3 : Cook over medium heat for about 20 minutes until the meat is tender but firm.

Step 4 : Then, add the Barbecue Chorizo and smoked pork ribs to the pot and cook over medium heat for another 15 minutes.

Step 5 : Remove, strain the broth, and transfer it to another pot along with the meats.

Step 6 : Add the coconut milk, annatto, adjust the salt, and cook over medium heat until it comes to a boil.

Step 7 : Once boiling, add the yuca cut into pieces and cook for 10 minutes.

Step 8 : Next, add the green plantains and ripe plantains, also cut into pieces, and cook for another 15 minutes, adjusting the salt as needed.

Step 9 : Finally, serve the dish in deep bowls and accompany with white rice and chili to taste.
