Tapado Olanchano Soup

Ingredients

2 pounds of Salted beef

2 pounds of Smoked pork ribs

1 pound of Pork chorizo

1 pound of Pork cracklings

2 Tomatoes

1 Onion

1 Sweet chili pepper

3 Peeled garlic cloves

1 tablespoon of Vegetable lard

3 Ripe plantains

3 Yucas (cassava)

5 Green plantains

5 Chopped cilantro leaves

1 tablespoon of Meat broth

1 tablespoon of Chicken broth

1 tablespoon of Seasoning

1 pinch of Salt

1 teaspoon of Achiote

1 can of Coconut milk

5 Garlic cloves

Water

Ripe plantain shells

1 pinch of Pepper

Preparation

Step 1 : The meat is salted and left in water overnight, then cut into medium pieces.

Step 2 : In a pot, sauté tomatoes, chili, onion, cilantro, and garlic with a little oil.

Step 3 : Add the beef and mix, adding a little water to cook the meat.

Step 4 : Once cooked, add the pork, broths, and let it cook.

Step 5 : Then, separate the meat from the broth and set both aside.

Step 6 : For the tapado, place a layer of ripe plantain shells at the bottom of the pot, followed by a layer of yuca, a layer of beef, a layer of chorizo, a layer of green plantains, a layer of smoked ribs, a layer of cracklings, and finally another layer of ripe plantain shells.

Step 7 : Add the meat broth and coconut milk, making sure it isn't too watery.

Step 8 : Cover the pot and cook until the plantains are soft.
