Although vegetable soup is common in many places, in Honduras, a spicy touch has been added to set it apart. This reinterpretation has captivated the palates of those seeking unique culinary experiences.

Ingredients

2 cans of White beans, rinsed and drained

1 cup of Frozen corn

1 can of Tomato purée

1 can of Green chiles, uncut

1 Medium onion, chopped

1 Celery stalk, chopped

1 Carrot, diced

2 tablespoons of Olive oil

3 Garlic cloves, minced

cup of Water

1 tablespoon of Chili powder

2 teaspoons of Dried oregano

1 teaspoon of Salt

Preparation

Step 1 : In a skillet, heat the oil and add the onion, celery, carrot, and garlic.

Step 2 : Cook for 5 minutes or until the vegetables are tender, stirring occasionally.

Step 3 : Then, add the beans, water, corn, tomato purée, chiles, chili powder, oregano, and season with salt to taste.

Step 4 : Simmer over low heat for 20 minutes, stirring occasionally.

Step 5 : Finally, garnish the soup with cilantro leaves.
