Spicy Vegetable Soup

Many people are used to traditional vegetable soup; in Honduras, we add a particular spicy touch that makes this a revolutionary recipe in the gastronomic scene.

Although vegetable soup is common in many places, in Honduras an added spicy touch sets it apart. This reinterpretation has won the hearts of those seeking unique culinary experiences.

Ingredients

2 cans of White beans, rinsed and drained

1 cup of Frozen corn

1 can of Tomato purée

1 can of Green chili, uncut

1 Medium onion, chopped

1 Celery stalk, chopped

1 Carrot, diced

2 tablespoons of Olive oil

3 Garlic cloves, minced

1 ½ cup of Water

1 tablespoon of Chili powder

2 teaspoons of Dried oregano

1 teaspoon of Salt

Preparation

Step 1 : In a skillet, heat the oil and add the onion, celery, carrot, and garlic.

Step 2 : Cook for 5 minutes or until the vegetables are tender, stirring occasionally.

Step 3 : Then, add the beans, water, corn, tomato purée, chilies, chili powder, oregano, and salt to taste.

Step 4 : Simmer over low heat for 20 minutes, stirring occasionally.

Step 5 : Finally, garnish the soup with cilantro leaves.
