Ingredients

2 ½ pounds of Pumpkin, peeled and chopped

3 tablespoons of Olive oil

1 cup of Chopped onion

2 Garlic cloves, finely chopped

2 cups of Chicken broth

½ cup of Sour cream

8 Slices of cooked bacon, crumbled

Salt

Preparation

Step 1 : In a pot, add olive oil, onion, and garlic, cook for about 4 minutes, stirring constantly.

Step 2 : Then add the pumpkin, chicken broth, and salt to taste.

Step 3 : Cover and let cook for about 40 minutes over medium heat until soft.

Step 4 : Once the pumpkins are soft, transfer to a blender and blend until smooth and without lumps.

Step 5 : Finally, serve in bowls and finish the recipe by adding sour cream and crumbled bacon.
