Ingredients

2 ½ pounds of Pumpkin, peeled and chopped

3 tablespoons of Olive oil

1 cup of Diced onion

2 Garlic cloves, finely chopped

2 cups of Chicken broth

½ cup of Sour cream

8 Cooked bacon slices, crumbled

Salt

Preparation

Step 1 : In a pot, add olive oil, the onion, and garlic, and cook for about 4 minutes, stirring constantly.

Step 2 : Then, add the pumpkin, chicken broth, and salt to taste.

Step 3 : Cover and let cook for about 40 minutes over medium heat until tender.

Step 4 : Once the pumpkins are soft, transfer to a blender and blend until smooth and lump-free.

Step 5 : Finally, serve in bowls and complete the dish by adding sour milk and crumbled bacon.
