Pot stew soup is a comforting and traditional dish in Honduran cuisine. Made with beef ribs, beef shank, green chili, onion, tomato, carrots, potatoes, corn on the cob, and cilantro, it is slowly cooked to create an exquisite blend of flavors.
In a pot, cook the beef ribs with water, beef shank, beef broth, and salt to taste. Then, add chopped green chili, onion, and tomatoes, and let it simmer for 15 minutes.
Next, add carrots, cubed potatoes, corn on the cob pieces, and cilantro leaves, cooking until the vegetables are tender. Remove from heat and serve the delicious Pot Stew Soup.
Pot Stew Soup
Ingredients
4 pounds of Beef ribs
2 liters of Water
4 pounds of Beef shank
1 pinch of Salt
2 cups of Beef broth
1 Sweet green chili, chopped
1 Chopped onion
2 Chopped tomatoes
2 Sliced carrots
2 Cubed potatoes
2 Corn on the cob pieces
3 Cilantro leaves
Preparation
Step 1 : In a pot, cook the beef ribs together with water, the beef shank, beef broth, and season to taste.
Step 2 : Cook for 45 minutes in a pressure cooker or 2 hours on low heat.
Step 3 : Once the time has passed, open the pot and add the chopped green chili, chopped onion, and chopped tomatoes.
Step 4 : Cook for another 15 minutes.
Step 5 : Then, add the carrots, cubed potatoes, corn on the cob pieces, and coarse cilantro leaves.
Step 6 : Adjust the seasoning and cook for 30 minutes, or until all the vegetables are tender.
Step 7 : Finally, remove from heat and serve.
