Pot Soup

Pot soup is a comforting and traditional dish in Honduran cuisine. Prepared with beef ribs, beef shanks, green chili, onion, tomato, carrots, potatoes, corn, and cilantro, it is slowly cooked to create an exquisite flavor blend.

In a pot, cook the beef ribs with water, beef shanks, beef broth, and salt to taste. Then, add chopped green chili, onion, and tomatoes, and cook for 15 minutes.

Next, add carrots, potatoes, corn, and cilantro leaves, cooking until the vegetables are tender. Remove from heat and serve the delicious Pot Soup.

Ingredients

4 pounds of Beef ribs

2 liters of Water

4 pounds of Beef shanks

1 pinch of Salt

2 cups of Beef broth

1 Chopped sweet green chili

1 Chopped onion

2 Chopped tomatoes

2 Sliced carrots

2 Diced potatoes

2 Chopped corn

3 Cilantro leaves

Preparation

Step 1 : In a pot, cook the beef ribs along with water, beef shanks, beef broth, and season to taste.

Step 2 : Cook for 45 minutes in a pressure cooker or for 2 hours over low heat.

Step 3 : Once the time has passed, open the pot and add the chopped green chili, chopped onion, and chopped tomatoes.

Step 4 : Cook for an additional 15 minutes.

Step 5 : Then, add the carrots, diced potatoes, chopped corn, and whole cilantro leaves.

Step 6 : Adjust seasoning and cook for 30 minutes, or until all vegetables are tender.

Step 7 : Finally, remove from heat and serve.
