Mud Crab Soups
Ingredients

2 cups of Coconut meat
1 tablespoon of Oil
12 Mud crabs
2 Green plantains
1 pound of Yuca (cassava)
Salt and pepper
1 teaspoon of Cumin
Annatto
1 Chopped sweet chili
1 Chopped tomatoes
½ Chopped onion
1 Crushed garlic clove
2 Chopped cilantro leaves
1 pinch of Pepper

Step 1 : To prepare this delicious dish, start by grating the coconut and extracting as much milk as possible, then set it aside.
Step 2 : Next, clean the mud crabs and reserve them.
Step 3 : In a pot, add a tablespoon of oil and sauté the sweet chili, tomatoes, onion, garlic, and cilantro until fragrant.
Step 4 : Then, add the sliced plantains and yuca, along with the cleaned mud crabs.
Step 5 : Stir all ingredients and add the coconut milk from the two coconuts, and if necessary, a little extra boiling water if the liquid isn’t enough.
Step 6 : Cook over low heat and season with salt, pepper, and annatto to taste, for approximately 20 minutes.
