Preparation
Step 1 : To prepare the soup, start by sautéing the chili, onion, garlic, and tomato in a pot, adding some oil.
Step 2 : Then, add the mondongo and sauté for a few minutes before incorporating the necessary water and coconut milk for the soup.
Step 3 : Next, add all the seasonings and vegetables, except for the ripe plantains, and cook everything for about an hour.
Step 4 : Finally, add the chopped ripe plantains and let it cook a little longer.
Step 5 : This mondongo soup can be served accompanied by white rice.
