Minestrone Soup
Ingredients
3 tablespoons of Oil
1 cup of Chopped onion
¾ Diced carrots
½ cup of Diced celery
1 teaspoon of Toasted garlic
1 can of Cooked beans
1 cup of Diced eggplant
¾ cup of Cooked chickpeas
1 cup of Chopped fresh tomatoes
Salt
¼ teaspoon of Black pepper
1 teaspoon of Oregano
1 teaspoon of Basil
1 teaspoon of Parsley
2 cups of Tomato sauce
6 cups of Chicken or beef broth
¼ cup of Wine
⅓ cup of Macaroni
Preparation
Step 1 : In a pot, add the oil and heat it.
Step 2 : Then add the onion, celery, and carrots, and sauté for about 10 minutes until they are soft.
Step 3 : Next, add the chicken or beef broth and incorporate all the remaining ingredients, except the macaroni.
Step 4 : Let it cook on low heat for about 30 minutes.
Step 5 : Afterward, add the macaroni and cook for another 30 minutes.
Step 6 : If necessary, adjust the salt and add more water if needed.
