Meatball Soup

Ingredients

¼ cup of Milk

3 Slices of bread

300 grams of Ground beef

2 Finely chopped garlic cloves

½ Chopped onion

¼ cup of Chopped cilantro

½ cup of Pecorino cheese

1 Egg

4 tablespoons of Oil

3 Fully ripe tomatoes

2 tablespoons of Oil

6 cups of Vegetable broth

½ tablespoon of Ground oregano

1 Bay leaf

1 teaspoon of Ground cumin

1 Onion

1 Bell pepper

2 Garlic cloves

2 Potatoes

1 Carrot

1 Bunch of chopped cilantro

1 pinch of Sugar

1 pinch of Salt

1 pinch of Black pepper

Preparation

Step 1 : Start by preparing the meatballs: place the milk in a bowl and soak the bread slices for a few minutes, squeezing out the excess of milk.

Step 2 : Then place the bread in a container along with the meat, garlic, onion, cilantro, cheese, egg, and knead until all ingredients are well combined.

Step 3 : Form small balls of the desired size with the mixture and brown them in hot oil in a skillet all over.

Step 4 : Once sealed, remove and let rest on absorbent paper.

Step 5 : For the sauce, boil the tomatoes in a pot for 7 minutes, then blend in a blender until obtaining a paste-like sauce.

Step 6 : Pour into a pot with oil and boil for 5 minutes.

Step 7 : Add vegetable broth, oregano, bay leaf, cumin, salt, pepper, and cook covered until boiling.

Step 8 : Chop potatoes and carrots, add to the pot with the meatballs and cook for 15 minutes.

Step 9 : Finely chop onion, pepper, and garlic, then sauté in a skillet with oil for 2 minutes.

Step 10 : Then pour into the pot with the soup, add cilantro and sugar, stir, and cook for another 5 minutes.

Step 11 : Adjust seasoning as needed.

Step 12 : Finally, serve and enjoy the meatball soup, accompanied by avocado, white rice, and corn tortillas.

Step 13 : You can add more vegetables such as sweet potato, chayote, pumpkin, yucca, celery, or zucchini.

Step 14 : If desired, add a pinch of sugar to neutralize the acidity of the sauce.
