The Honduran King Crab Soup originates from the Honduran coast, where flavors from local traditions merge with the exquisite taste of crab.
King Crab Soup
Ingredients
2 kilograms of King crab
3 liters of Water
1 Onion
1 Sweet chili
2 Peeled garlic cloves
2 tablespoons of Oil
3 Green bananas
1 kilogram of Cassava
1 tablespoon of Shrimp bouillon
1 tablespoon of Ground cumin
½ tablespoon of Ground oregano
1 tablespoon of Achiote
2 cups of Coconut milk
¼ cup of Chopped culantro
1 Chopped scallion bunch
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : **Wash and cook:**
Step 2 : - Wash the king crab thoroughly and place it in a pot with 3 liters of water, cooking for 10 minutes.
Step 3 : **Prepare the ingredients:**
Step 4 : - Finely chop the onion, chili, and garlic; set aside.
Step 5 : - Peel the bananas and cassava, cutting them into desired sizes.
Step 6 : **Cook the vegetables:**
Step 7 : - After 10 minutes, remove the king crab from the pot and set aside.
Step 8 : - Add the bananas and cassava immediately to the pot, cover, and cook.
Step 9 : **Prepare the sofrito:**
Step 10 : - In a skillet with oil, sauté the onion and chili for 2 minutes; then add the garlic and sauté for another minute.
Step 11 : **Add additional ingredients:**
Step 12 : - Pour the sofrito into the pot along with the bouillon, cumin, oregano, achiote, salt, and pepper to taste.
Step 13 : - Stir and cook for 10 minutes.
Step 14 : **Finish the soup:**
Step 15 : - Afterward, add the crab back into the pot, then incorporate the coconut milk and cilantro; reduce the heat and cover, cooking for another 5 minutes.
Step 16 : - When the vegetables are tender, remove from heat and serve the delicious king crab soup with onion on the stalk and green plantain slices to taste.
