Honduran Mondongo Soup
Ingredients
1 kilogram of Chopped Mondongo
1 Chopped onion
3 Minced garlic cloves
2 Sliced carrots
2 Sliced corn on the cob
1 Yuca chunks
1 Chopped green banana
1 Chopped guaco chili
1 Chopped tomato
1 Fresh cilantro sprig
Chicken broth
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a large pot, place the mondongo and cover it with water.
Step 2 : Bring to a boil and cook for 45 minutes over medium heat until tender.
Step 3 : Then, add the onion, garlic, carrots, corn, yuca, green banana, guaco chili, tomato, cilantro, salt, and pepper.
Step 4 : Cook for an additional 15 to 20 minutes until the vegetables are soft.
Step 5 : The Honduran Mondongo Soup with a touch of home is ready to be served hot and enjoyed.
