Ingredients

2 kilograms of Desalted dried beef

1 Large onion

2 Sweet chiles

1 Bunch of cilantro

1 Spicy chile

3 Bay leaves

1 tablespoon of Annatto

1 teaspoon of Curry

1 pinch of Salt

4 Green bananas

2 Ripe plantains

1 kilogram of Peel yuca

½ Finely chopped onion

1 Finely chopped pepper

4 Crushed garlic cloves

1 Chopped tomato in cubes

1 teaspoon of Cumin

1 tablespoon of Annatto

1 tablespoon of Curry

1 Smoked olanchano sausage

1 Smoked pork chop

2 cups of Coconut milk

1 pinch of Pepper

Preparation

Step 1 : Finely chop the onion, cilantro, sweet and spicy chiles, and set aside.

Step 2 : In a large pot, place the beef along with the onion, cilantro, bay leaves, annatto, curry, chiles, season to taste, and add water until covering the beef.

Step 3 : Cover and cook for 40 minutes.

Step 4 : Meanwhile, remove the yuca rind, peel the bananas, and cut them into your preferred size.

Step 5 : Reserve the banana peels and keep in cold water to prevent oxidation.

Step 6 : Carefully remove the lid from the pressure cooker and check that the meat is tender.

Step 7 : Set aside the meat and broth.

Step 8 : In a skillet with olive oil, sauté the garlic, onion, tomato, and pepper.

Step 9 : Add cumin, salt, pepper to taste, annatto, curry, and 1 cup of the reserved broth.

Step 10 : Cook for 5 minutes.

Step 11 : Pour the sauté into a blender and blend.

Step 12 : Return to the pot with the remaining broth, 1 cup of coconut milk, and yuca, cooking for 20 minutes covered.

Step 13 : When the yuca begins to soften, add the remaining cup of coconut milk, bananas, and plantains.

Step 14 : Cook over medium-low heat.

Step 15 : Separately, brown the sausages and pork chop in a skillet with their own oil and set aside.

Step 16 : Layer the cooked meat and the smoked sausage and chop.

Step 17 : Cover with the banana peel and cook for 15 minutes to allow flavors to meld.

Step 18 : Afterward, remove from heat and take out the banana peel.

Step 19 : Serve the beef stew with coconut accompanied by white rice if desired.
