This recipe, based on beef, is a typical dish that gets its name from the way its ingredients are cooked.
This recipe has been passed down from generation to generation, becoming a symbol of culinary identity in the country. The name "tapado" refers to the way the ingredients are cooked, creating an exquisite and comforting result to enjoy with family or friends.
Beef Stew
Ingredients
1 ½ kilogram of Salted chopped beef
1 kilogram of Chopped pork ribs
½ kilogram of Sautéed pork chorizo in slices
3 tablespoons of Oil
2 Large onions
3 Large tomatoes
3 Sweet peppers
5 Garlic cloves
½ cup of Finely chopped cilantro
1 Chopped celery stalks
1 tablespoon of Cumin
1 teaspoon of Achiote
1 Chicken bouillon cube
3 Wide cilantro leaves
1 kilogram of Chopped cassava
2 Green plantains
2 Ripe plantains
2 Chopped corn on the cob
4 cups of Coconut milk
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The salted meat is soaked in water since the morning and rinsed with cold water to remove excess salt.
Step 2 : In a medium pot with approximately 1 liter of water, cook the beef over medium-high heat, removing the foam that appears on the surface.
Step 3 : Cook for 45 minutes or until tender, then set aside.
Step 4 : In another pot, cook the pork ribs with salt and 2 crushed garlic cloves until tender, reserving the water that reduces.
Step 5 : Finely chop the tomato, onion, peppers, and garlic.
Step 6 : In a skillet with oil, sauté the remaining garlic, onion, and peppers for 2 minutes, then add the cilantro, celery, ancho cilantro, achiote, cumin, bouillon cube, coconut milk, and season to taste.
Step 7 : Let it sauté over low heat for a few minutes until the flavors blend, about 5 minutes, then set aside.
Step 8 : Cut the plantains and cassava into pieces, reserving the peel of the plantain.
Step 9 : In a tall, large pot, layer each ingredient starting with a layer of plantain at the bottom, alternating with meat, cassava, plantain, chorizo, ripe corn, pork ribs with their water, and the sauté with coconut milk.
Step 10 : Cover the stew with the plantain peels, place a lid on the pot, and cook over low heat for about 45 minutes or until all vegetables are tender.
Step 11 : Remove the peels and serve this delicious Honduran beef stew according to each person's taste.
