Bean Soup with Pelleja

Ingredients

500 grams of Pelleja

1 kilogram of Beans

3 Garlic cloves

1 White onion

2 Sweet chiles

Cumin, oregano, and thyme

1 Beef broth

4 Eggs

1 Cilantro bunch

2 Green plantains

1 kilogram of Yuca

2 liters of Water

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Add the 2 liters of water and garlic cloves to a pot.

Step 2 : Place it over heat and add the pound of beans.

Step 3 : Then, chop the onion, chiles, and cilantro; proceed to cut the vegetables, plantains, and yuca into pieces, adding them to the pot to cook.

Step 4 : Wash the pelleja and set aside.

Step 5 : Next, season the soup using the beef broth, salt, pepper, and spices.

Step 6 : Add the pelleja and finally, the eggs.

Step 7 : Cook for approximately 30 minutes.

Step 8 : After the time has passed, verify that the pelleja is tender and well-cooked, as well as the vegetables, adjusting the seasoning if necessary.

Step 9 : Serve the soup hot.
