Bean Soup with Egg
Ingredients
1 pound of Beans
1 White onion
1 Sweet chili pepper
2 Bone broth for ribs
1 pinch of Salt
2 Spice bags
1 Tomato
1 Culantro bunch
1 Castilla culantro bunch
5 Eggs
2 liters of Water
1 Achiote packet
3 Green plantains
4 tablespoons of Olive oil
Preparation
Step 1 : In a large pot, add the 4 tablespoons of olive oil.
Step 2 : Chop the onion, chili, tomato, and garlic, and sauté in the hot oil.
Step 3 : Then, add water, cut the plantains into slices, and add to the pot along with the pound of beans.
Step 4 : Chop the culantro bunch and the Castilla culantro bunch, add to the pot, and mix everything well.
Step 5 : Bring to a medium heat to boil.
Step 6 : Next, add the rib broth, salt, achiote packet, and spice bags.
Step 7 : Mix slowly so that all flavors combine.
Step 8 : Finally, place the eggs in the pot and cook for approximately 25 minutes.
Step 9 : Check that the beans are tender along with the plantains and that the soup is well seasoned.
Step 10 : If necessary, adjust the seasoning with more condiments to taste and let cook a bit longer, adding more water if needed.
