Ingredients

500 grams of Black beans, soaked for 5 hours

4 Small pork ribs

3 Plantains, peeled and sliced

500 grams of Yucca, peeled and cut into 5 cm pieces

4 tablespoons of Olive oil

1 White onion, sliced

1 Bell pepper cut into cubes

6 Garlic cloves, chopped

1 Bunch of cilantro, chopped

1 tablespoon of Cumin

1 pinch of Salt

Preparation (simple version)

Step 1 : In a large pot, sauté the onion, garlic, and bell pepper in olive oil for 1 minute over medium heat, stirring several times. Bean Soup - Preparation - Step 1
Step 2 : Add the soaked beans and cover with boiling water, adding the cilantro. Cook over medium heat for 1 hour, gently stirring occasionally. Bean Soup - Preparation - Step 2
Step 3 : Brown the pork ribs in a skillet over medium-high heat until golden, then add them to the pot. Add 200 ml of boiling water and cook for 20 more minutes. Bean Soup - Preparation - Step 3
Step 4 : Incorporate the yucca and plantains into the pot, seasoning with cumin, salt, and pepper. Cook everything together until the yucca disintegrates, approximately 30 minutes, and serve accompanied by white rice, fresh cheese, avocado, and tortillas. Bean Soup - Preparation - Step 4

Step 1 : In a large pot, sauté the onion, garlic, and bell pepper in olive oil for 1 minute over medium heat, stirring several times.

Step 2 : Add the soaked beans to the pot and cover with boiling water, adding the cilantro.

Step 3 : Mix well and cook over medium heat for 1 hour, gently stirring from time to time.

Step 4 : Place the pork ribs in a skillet and brown over medium-high heat until golden on both sides.

Step 5 : Then add them to the bean pot.

Step 6 : Add 200 ml of boiling water and continue cooking for 20 minutes.

Step 7 : Peel and cut the yucca and plantains into pieces, adding them to the pot.

Step 8 : Add cumin, salt, and pepper.

Step 9 : Mix well, cover the pot, and cook again until the yucca begins to fall apart, about 30 minutes.

Step 10 : Finally, serve the bean soup with white rice, grated fresh cheese, avocado, and tortillas.
