Ingredients

1 Dark beer

½ cup of Mustard

1 Ground garlic head

Coarse salt

Coarse ground pepper

1 Standard size smoked or cured pork leg, 2 to 5 pounds

1 pound of Ground spanish chorizos

½ pound of Smoked bacon, ground

12 Slices of red morrón stuffed olives

1 liter of Apple juice

½ cup of Tamarind juice

1 cup of Bee honey

1 cup of Sugar

1 Yellow butter stick

Preparation

Step 1 : To prepare the pork leg, it is necessary to marinate it for at least 24 hours before cooking.

Step 2 : Mix all marinade ingredients and ensure they are evenly distributed on the leg.

Step 3 : After marinating, make holes in the leg with a filleting knife, positioning it at a right angle and trying to reach the bone.

Step 4 : Fill each groove with ground chorizo, followed by bacon, and seal with an olive.

Step 5 : Repeat this process throughout the leg, making as many grooves as possible.

Step 6 : Place the leg in a preheated oven at 400°F, covered with aluminum foil, and cook for 3 hours.

Step 7 : After this time, uncover the leg, baste it in its juices, and bake for an additional 30 minutes.

Step 8 : Prepare the glaze in a saucepan and reduce it to syrup consistency.

Step 9 : Pour the apple syrup over the leg in the oven and continue baking, basting with the glaze until caramelized and adhering to the pork skin.

Step 10 : When serving, place the whole or sliced leg, accompanied by the cooking juices.
