Stuffed Hen
Ingredients
8 pounds of Hen
6 Garlic cloves
3 Green onions
3 Spice bags
1 White onion
2 Carrots
3 Potatoes
1 Tomato paste
3 Raisin bags
1 Cilantro bunch
1 Parsley bunch
1 can of Peas
1 can of Sweet corn
1 Lemon
1 pound of Ground meat
2 Chicken consommé
1 cup of White wine
1 Stick of margarine
1 Pataste
1 pinch of Salt
Preparation
Step 1 : The hen should be washed and cleaned with lemon juice, the skin removed, and a hole made in the center for the head.
Step 2 : Place it on a baking tray and brush it with melted margarine.
Step 3 : Prepare the sauce in a pot with 4 cups of water (and optional sugar) and pour it inside the hen.
Step 4 : Cut the vegetables into square pieces and stuff half of them inside the hen, leaving the rest around the tray.
Step 5 : Chop the garlic, green onions, onion, cilantro, and parsley, add half inside and the rest around.
Step 6 : Season with salt, consommé, and spices, add the soaked ground meat in white wine, peas, sweet corn, and the rest of the wine.
Step 7 : Add raisins, bake at 350 degrees for approximately 45 minutes until golden.
Step 8 : Check that the inside of the hen is well cooked and tender.
Step 9 : Let cool before serving.
