Stuffed Chiles

An easy-to-make and very healthy recipe, it's a delicious way to get our children to enjoy their vegetables.

This traditional preparation uses local ingredients and is part of the culinary identity of the region.

Stuffed Chiles

Ingredients

1 ½ pound of Ground beef

1 Finely chopped large onion

1 ½ Finely chopped chili

5 Crushed garlic

6 Medium green chiles

3 tablespoons of Olive oil

1 pinch of Salt

3 tablespoons of Tomato purée

2 teaspoons of Achiote

1 Large potato

½ pound of Mozzarella cheese

1 tablespoon of English sauce

1 pinch of Pepper

Preparation

Step 1 : In a blender, place the onion, chili, tomato purée, English sauce, and achiote, blend until smooth.

Step 2 : In a pot, add the ground beef and cubed potatoes, season with salt, pepper, and the blended mixture.

Step 3 : Mix well and add water and margarine.

Step 4 : Let cook for 25 minutes.

Step 5 : Cut the chiles open from the top and remove all the seeds.

Step 6 : Fill each chili with the meat mixture and mozzarella cheese.

Step 7 : Bake the stuffed chiles for 20 minutes at 350°C.
