Ingredients

3 cups of Flour

4 Eggs

2 tablespoons of Olive oil

1 Egg yolk

Water

Cornstarch

1 pound of Mozzarella cheese

½ pound of Loose chorizo

3 Garlic cloves

½ Onion

1 Green or red chili

½ cup of White wine

1 tablespoon of Cornstarch

½ Yellow butter stick

4 Tomatoes

1 pinch of Salt

Preparation

Step 1 : In a bowl, place the flour and add the eggs, olive oil, and salt.

Step 2 : Mix and knead until obtaining an elastic consistency.

Step 3 : Cover the dough with plastic wrap and let it rest for 30 minutes.

Step 4 : Then, divide the dough into two parts and stretch until the desired shape is achieved.

Step 5 : To prepare the filling, sauté the loose chorizo with the mozzarella cheese and place a layer of filling over the dough.

Step 6 : Moisten the edges of the dough, place another layer on top, and seal with your fingers.

Step 7 : Cut the ravioli and place them on a tray.

Step 8 : Fry the ravioli in a pot with hot oil until golden.

Step 9 : For the sauce, sauté in butter the garlic, onion, chili, and tomatoes, add salt to taste.

Step 10 : Dissolve the cornstarch in water and add it to the mixture along with the wine.

Step 11 : Cook over low heat for 10 minutes.

Step 12 : Serve the hot seafood ravioli accompanied by the sauce.
