Salted Meat and Coconut Stew
Ingredients
1 pound of Beef
1 pound of Smoked sausage
1 pound of Pork
2 Green and medium bananas
1 pound of Yuca (cassava)
2 cans of Coconut milk
2 Achiote sachets
1 Medium onion
1 Green chili
3 Garlic cloves
Cilantro sprig
1 pinch of Salt
1 Pepper sachet
1 Oregano sachet
2 Corn on the cob
1 pound of Potatoes
Preparation
Step 1 : In a large pot over the fire, place the two sliced green bananas, along with the potatoes, yuca, chopped onion, and chili.
Step 2 : Then add enough water for the vegetables to cook thoroughly.
Step 3 : Next, add the beef, sausage, and pork, increasing the heat slightly.
Step 4 : Begin to stir and add the two cans of coconut milk.
Step 5 : Season with the two achiote sachets, pepper, salt, garlic, and oregano.
Step 6 : Also add the cilantro sprig and the two corn cobs.
Step 7 : Mix everything very well and check that the vegetables are becoming tender.
Step 8 : Adjust salt if necessary.
Step 9 : Let it simmer for 25 minutes, stirring occasionally so that the coconut milk dissolves and blends well with the other ingredients.
Step 10 : After that time, verify that the meat is well cooked and tender.
Step 11 : If all ingredients are ready, turn off the heat and let it cool.
Step 12 : The stew can be served with white rice.
