Ingredients

15 pounds of Pork leg

2 tablespoons of Finely chopped thyme

1 tablespoon of Finely chopped rosemary

½ cup of Ground garlic

2 cups of Chopped onion

2 cups of Chopped celery

2 Head of garlic in pieces

2 cups of Chopped carrot

1 cup of Prune

1 cup of Raisins

1 cup of Grated rapadura sweet

2 liters of Pineapple juice

2 cups of Apple nectar

2 cups of Pear nectar

½ cup of Dark soy sauce

½ cup of Yellow butter

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The pork leg should marinate 24 hours in advance.

Step 2 : Pierce and rub with garlic, thyme, rosemary, salt, pepper, paprika, and grated rapadura, then let it rest.

Step 3 : Preheat the oven to 350°F.

Step 4 : Place the leg on a baking tray with onion, celery, garlic, and carrot, adding juices and other ingredients, then bake covered for 4 hours.

Step 5 : It is important to check every half hour and increase the temperature to 400°F at the end to brown the leg with Yellow Butter for 20 to 30 minutes.
