Ingredients
2 pounds of Hand of stone meat
1 cup of Chopped onion
1 cup of Chopped green chili
2 cups of Chopped tomato
1 tablespoon of Achiote powder
1 tablespoon of Ground garlic
½ Yellow butter stick
1 cup of Apple nectar
4 cups of Cooked white rice
½ pound of Cream cheese
4 tablespoons of Cream
2 Ripe plantains
2 Avocados
Preparation
Step 1 : The meat is seasoned with salt and pepper.
Step 2 : It is browned in a skillet and then cooked in a pot with water, chopped onion and garlic for 2 hours (or 1 hour in a pressure cooker) until tender.
Step 3 : The meat is shredded and the cooking water is reserved.
Step 4 : In a skillet, sauté the onion, green chili, chopped tomato, and ground garlic with Yellow Butter.
Step 5 : Then add 2 cups of the cooking water, cook for 5 minutes, and add the meat and Apple Nectar.
Step 6 : Cook until it reaches a slightly thick but juicy consistency.
Step 7 : Serve the meat accompanied by avocado, white rice, plantains, Cream Cheese, and Cream.
