Ingredients
1 pound of Beef cut into chunks
1 pound of Peeled shrimp
1 pound of Cassava chunks
2 Green plantains sliced
1 Chopped white onion
1 Chopped red bell pepper
2 Chopped garlic cloves
2 cups of Coconut milk
2 cups of Fish broth
1 Bay leaf
1 Fresh cilantro sprig
1 pinch of Salt
1 pinch of Black pepper
Preparation
Step 1 : In a large pot, cook the beef with the onion, bell pepper, and garlic until the meat is browned.
Step 2 : Then add the coconut milk, fish broth, bay leaf, salt, and pepper.
Step 3 : Cook on low heat for 30 minutes.
Step 4 : Next, add the cassava and cook for an additional 15 minutes.
Step 5 : Add the shrimp and plantains, cooking for an additional 5 minutes until the shrimp turn pink.
Step 6 : Taste and adjust the seasoning as needed. Serve hot, sprinkled with chopped fresh cilantro.
