Roasted Turkey
Ingredients
1 Whole turkey
2 pounds of Ground meat
2 tablespoons of Yellow butter
½ cup of Bread crumbs
¼ cup of Raisins
1 teaspoon of Achiote
1 cup of Chopped Gouda cheese
1 cup of Chopped onion
1 cup of Chopped bell peppers
2 tablespoons of Ground garlic
1 tablespoon of Finely chopped parsley
1 cup of Yellow butter
1 liter of Orange juice
1 cup of Red wine
½ cup of Honey
½ cup of Ground garlic
1 tablespoon of Finely chopped thyme
½ tablespoon of Ground oregano
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Marinate the turkey 24 hours in advance, starting by mixing the Yellow Butter with ground garlic, thyme, Gouda cheese, and oregano.
Step 2 : Carefully place this mixture under the skin of the turkey, both on the breast and the legs.
Step 3 : Brush the turkey with orange juice and red wine, then season the entire skin with salt and pepper, and let it rest in the refrigerator on a tray.
Step 4 : In a skillet, melt the Yellow Butter, sauté the onion, ground garlic, and bell peppers, then add the ground meat and cook for 15 minutes.
Step 5 : Add the bread crumbs, raisins, achiote, cook for another 5 minutes, then add chopped parsley and season with salt and pepper.
Step 6 : Preheat the oven to 300°F and place the turkey in a baking dish over a bed of chopped onion, celery, and carrots.
Step 7 : Add all the marinade juices and cover with aluminum foil, then bake for 3 hours.
Step 8 : It is important to monitor to prevent the turkey from burning, and if the juices evaporate, add more water or orange juice.
Step 9 : After 3 hours, remove the foil and bake for another 30 minutes.
Step 10 : Then, remove the turkey from the oven again and brush with honey, increase the temperature to 350°F, and bake for an additional 30 minutes to brown it.
