Ingredients

15 pounds of Pork

1 pound of Salt

10 Tomatoes

3 Sweet chiles

1 Fine cilantro bunch

7 Large red onions

2 tablespoons of Pepper

5 Garlic cloves

2 pounds of Corn dough

Preparation

Step 1 : Clean the piglet and season it with salt for a few minutes.

Step 2 : Remove the excess salt and season with one pound of diluted corn dough.

Step 3 : Blend the tomatoes, chiles, fine cilantro, and red onions until it becomes a broth.

Step 4 : Add the crushed garlic and the tablespoons of pepper into the broth.

Step 5 : In a pot, pour another pound of corn dough along with two liters of water and prepare the vegetable broth.

Step 6 : Bake the piglet at 370°C (698°F) for approximately 3 hours, turning it every half hour and covering it with aluminum foil to preserve the flavors.

Step 7 : After 3 hours, remove excess liquid, take off the aluminum foil, and leave it in the oven for another half hour to brown.

Step 8 : Once ready, serve accompanied by fried beans, tortillas, and lettuce salad.
