Rice with Shrimp in Coconut Sauce

Ingredients

2 cups of Water

¼ Onion

1 Garlic

1 cup of Rice

3 cups of Shrimp

1 cup of Canned mussels

1 tablespoon of Butter

2 tablespoons of Shredded coconut

2 cups of Coconut milk

½ tablespoon of Saffron

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pot with water, onion, and garlic, add the rice and cook over medium heat for 20 minutes until ready.

Step 2 : Meanwhile, sauté the shrimp and mussels in butter in a skillet.

Step 3 : Then add the coconut milk, shredded coconut, saffron powder, and salt, and cook over medium heat.

Step 4 : To serve, place the rice on a plate, add the seafood, and cover everything with the coconut sauce.
