Rice Tamal

Ingredients

2 cups of Cooked white rice

4 Banana leaves

1 Egg

½ cup of Grated mozzarella cheese

½ cup of Parmesan cheese

¼ cup of Maranon seeds

4 Garlic cloves

¼ cup of Cilantro leaves

¼ cup of Parsley leaves

¼ cup of Basil

½ cup of Olive oil

¼ cup of Water

½ pound of Pork for stewing

1 tablespoon of Achiote

½ cup of Chopped onion

1 tablespoon of Ground garlic

¼ cup of Chopped green chili

2 tablespoons of Tamarind juice

½ cup of Water

1 cup of Sliced radish

¼ cup of Chopped green onion

2 Lemons

1 tablespoon of Olive oil

1 pinch of Salt

1 pinch of Black pepper

Preparation

Step 1 : For the filling, cut the pork into cubes and season with salt, pepper, cumin, and achiote.

Step 2 : Then, brown the meat and add onion, chili, and garlic.

Step 3 : Add tamarind juice and cook for 20 minutes.

Step 4 : Next, prepare a green sauce with cilantro, parsley, basil, garlic, Parmesan cheese, maranon seeds, and water.

Step 5 : Mix this sauce with the cooked rice and grated mozzarella cheese.

Step 6 : Add the egg and mix well.

Step 7 : Proceed to place the rice dough on banana leaves with a bit of filling, wrap it, and steam for 25 minutes.

Step 8 : Finally, prepare the salad by mixing radish, green onion, lemon, olive oil, salt, and pepper.

Step 9 : Serve the tamales accompanied by the salad.
