Pork Menudo Stew
Ingredients
1 pound of Pork menudo
6 Sour oranges
1 pinch of Salt
2 Green chiles
1 Red onion
2 Tomatoes
4 Garlic cloves
2 Celery stalks
1 Butter bar
2 tablespoons of Paprika
2 Large chopped potatoes
2 tablespoons of Beef concentrate
1 tablespoon of Fresh basil
¼ cup of Wide cilantro
Preparation
Step 1 : Carefully wash the pork menudo with enough water and add half of the orange juice and salt to taste.
Step 2 : Let it simmer in enough water for 1 hour.
Step 3 : Then, remove, rinse again with plenty of water, and add the rest of the orange juice.
Step 4 : Cut the menudo into small pieces, reserving half a cup of broth.
Step 5 : Finely chop all vegetables and sauté them in a pan with the butter, cooking for 4 minutes.
Step 6 : Next, add the pork menudo along with paprika, beef concentrate, cilantro, basil, potatoes, broth, salt to taste, stirring to combine all flavors.
Step 7 : Once a thick sauce is obtained and the potatoes are tender, remove from heat and let rest for 5 minutes.
Step 8 : Serve the Pork Menudo Stew with white rice and slices of ripe plantain.
