Pork Head Salad

Delicious Honduran dish of pork head salad with exquisite flavors and varied textures, perfect to accompany any side dish.

If you have a pressure cooker, cook the pork head salad for only 30 minutes once the pot starts whistling.

If you want to add more textures to the dish, you can include pork feet and tail.

Ingredients

2 pounds of Pork head

Juice of 10 lemons

1 Green chili

1 Onion

2 Peeled garlic cloves

3 Tomatoes

2 Green plantains

2 Potatoes

2 Yucas

1 Carrot

6 Cilantro branches

1 tablespoon of Oil

3 cups of Water

2 tablespoons of Achiote

1 tablespoon of Ground oregano

1 teaspoon of Ground cumin

1 tablespoon of Paprika

1 can of Small can of tomato sauce

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare this delicious dish, it is important to start by thoroughly washing the pork head and rinsing it with lemon juice and salt.

Step 2 : Then, cook the pork head covered for an hour and a half.

Step 3 : While the pork head is cooking, it's time to chop the vegetables and greens to be used in the recipe.

Step 4 : Once the pork head is ready, chop it into pieces and then sauté the chili, onion, and garlic in a skillet.

Step 5 : Next, add the chopped pork head, tomatoes, cilantro, and the rest of the vegetables, then sauté.

Step 6 : Subsequently, add water, achiote, spices, salt, and pepper, and cook covered for 10 minutes.

Step 7 : Then, incorporate the tomato sauce and cook for another 15 minutes.

Step 8 : Finally, serve the pork head salad accompanied by white rice and corn tortillas.
