Ingredients

6 pounds of Pork loin

2 tablespoons of Yellow butter

2 cups of Red wine

½ cup of Fruit Punch juice

½ cup of Pineapple juice

2 Rosemary sprigs

½ cup of Cranberries

½ cup of Chopped in half cherries

2 tablespoons of Sugar

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The pork loin piece is seasoned with salt and pepper to taste.

Step 2 : Then, it is placed in a large skillet with hot olive oil and seared on all sides.

Step 3 : Next, the piece is removed and placed on a high oven tray, to which 1 cup of wine is added to enhance the flavor, along with the remaining wine, Fruit Punch juice, Pineapple juice, and rosemary.

Step 4 : The tray is covered with aluminum foil and baked at 300°F for 2 hours.

Step 5 : After the time, the piece is taken out of the oven, then returned and baked at 400°F for 15 to 25 minutes to brown.

Step 6 : Meanwhile, cranberries and cherries are sautéed in Yellow Butter with sugar and the pork cooking juice until reduced and thickened.

Step 7 : Finally, the pork piece is removed from the oven and drizzled with the prepared sauce.
