Ingredients

1 ½ kilogram of Pork shoulder ribs

200 grams of Achiote paste

2 tablespoons of Salt

1 tablespoon of Ground black pepper

½ teaspoon of Ground cloves

8 Garlic cloves

1 cup of Pineapple juice

1 cup of Lemon juice

2 Habanero chiles

Preparation

Step 1 : The meat is marinated for 12 to 24 hours in a mixture of achiote, salt, pepper, cloves, garlic, pineapple juice, and lemon.

Step 2 : Then, it is cooked in a pressure cooker for 7 to 8 hours on low or 4 to 5 hours on high.

Step 3 : Once ready, shred the meat into pieces, strain the sauce, and mix everything together.

Step 4 : On the other hand, marinate the pickled onions for 4 hours.

Step 5 : Finally, enjoy delicious Cochinita Tacos with pickled onions.
