Papillote Fish

We wrap the fish in aluminum foil with a mixture of chiles, onion, garlic, scallion, olive oil, pear nectar, and pecorino cheese.

Ingredients

2 pounds of Corvina fillet

2 cups of Julienned chiles

1 cup of Julienned onion

2 Cloves of garlic sliced

½ cup of Chopped scallion

4 Thyme branches

4 tablespoons of Olive oil

4 teaspoons of Yellow butter

4 tablespoons of Pear nectar

4 tablespoons of Grated pecorino cheese

Aluminum foil

Preparation

Step 1 : To prepare this dish, start by cutting 4 strips of aluminum foil the size of an A4 sheet.

Step 2 : Place chiles, onion, garlic, scallion, and a fillet of corvina in the center of each piece of foil.

Step 3 : Season with salt and pepper, then add yellow butter, olive oil, pear nectar, and a branch of thyme.

Step 4 : Fold the foil like a gift, carefully not to tear it, and place on a baking tray.

Step 5 : Once the packets are ready, bake for 25 minutes.

Step 6 : When serving, present the corvina inside the foil and sprinkle grated pecorino cheese over each portion.
