Papillote Fish

The Papillote Fish is a simple and elegant recipe that captures the essence of fresh ingredients. By cooking the fish in aluminum foil packets, all the flavors and juiciness are retained, creating a unique culinary experience.

We wrap the fish in aluminum foil with a mixture of chiles, onion, garlic, scallion, olive oil, pear nectar, and pecorino cheese.

Ingredients

2 pounds of Hake fillet

2 cups of Julienned chiles

1 cup of Julienned onion

2 Garlic cloves in slices

½ cup of Chopped scallion

4 Sprigs of thyme

4 tablespoons of Olive oil

4 teaspoons of Yellow butter

4 tablespoons of Pear nectar

4 tablespoons of Grated pecorino cheese

Aluminum foil

Preparation

Step 1 : To prepare this dish, start by cutting 4 sheets of aluminum foil the size of an A4 sheet.

Step 2 : Place in each sheet, at the center, chiles, onion, garlic, scallion, and a fillet of hake.

Step 3 : Season with salt and pepper, then add yellow butter, olive oil, pear nectar, and a sprig of thyme.

Step 4 : Next, fold the foil as if wrapping a gift, being careful not to tear the paper, and place in a baking tray.

Step 5 : Once the packets are ready, bake for 25 minutes.

Step 6 : When serving, present the hake inside the aluminum foil and sprinkle grated pecorino cheese on each portion.
