Pacayas with Egg

It consists of coating pacaya flowers in beaten egg and frying them.

Ingredients

6 Fresh pacayas

2 tablespoons of Sugar

4 Eggs

2 tablespoons of Flour

Cooking oil for frying

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Wash and devein the pacayas, then boil them in a pot with enough water, 2 tablespoons of salt, and 2 tablespoons of sugar for about 20 minutes.

Step 2 : Meanwhile, in a bowl, separate the eggs and beat the egg whites until stiff peaks form.

Step 3 : Then, continue beating and add the yolks, flour, and 1 teaspoon of salt.

Step 4 : Set aside this mixture.

Step 5 : Once the pacayas are cooked, remove them from the pot and let drain slightly.

Step 6 : Then, coat them in the egg and flour mixture, and fry them in a skillet with enough oil over medium heat.

Step 7 : When golden on both sides, remove and place on absorbent paper to drain excess oil.

Step 8 : Repeat this process with the remaining pacayas and then serve.
