Olanchana Casserole

This casserole, typical of the Olancho region, is a true delight made with pork ribs and vegetables.

Ingredients

1 pound of Pork ribs

1 pinch of Salt

½ pound of Peeled cassava (yuca)

2 Large potatoes

1 Carrot

½ Cabbage

5 Red tomatoes

1 Tocino (bacon)

1 Green bell pepper

1 Onion

2 Garlic cloves

1 tablespoon of Oil

3 cups of Water

2 Bay leaves

1 tablespoon of Chicken broth (consomé de pollo)

1 tablespoon of Ground oregano

1 teaspoon of Ground cumin

3 Ripe plantains

Frying oil

1 teaspoon of Sugar

¼ cup of Chopped cilantro

1 pinch of Pepper

Preparation

Step 1 : Cut the pork ribs into small pieces and season with salt and pepper to taste.

Step 2 : Set aside.

Step 3 : Dice the cassava, potatoes, carrot, cabbage, tomatoes, and tocino, and set aside.

Step 4 : In a large skillet with oil, sauté finely chopped onion, pepper, and garlic for about 5 minutes.

Step 5 : Add the ribs to the skillet and sear all sides.

Step 6 : Add water, bay leaves, seasonings, cover, and cook over medium-low heat for 30 minutes.

Step 7 : While everything is cooking, peel the plantains, cut into cubes, and fry in enough oil.

Step 8 : Drain on paper towels.

Step 9 : Once the ribs and vegetables are cooked, add the fried plantains, sugar, and cilantro to the skillet.

Step 10 : Stir and let cook on low heat for 5 minutes.

Step 11 : Adjust seasoning if needed, remove from heat, and serve.
