Loaded Potatoes
Ingredients
6 Potatoes
½ pound of Grilled chopped chorizo
½ cup of Chopped onion
½ cup of Chopped tomato
½ cup of Chopped green chili
2 tablespoons of Chopped cilantro
¼ cup of Lemon juice
6 tablespoons of Shredded Edam cheese
6 tablespoons of Shredded Pecorino cheese
6 tablespoons of Yellow butter
Preparation
Step 1 : In a skillet, sauté the chorizo along with the onion, tomato, and green chili.
Step 2 : Cook for a few minutes and then add the chopped cilantro along with the lemon juice, seasoning to taste.
Step 3 : Set the mixture aside.
Step 4 : Cook the potatoes with their skins on.
Step 5 : Once cooked, cut them in half and remove a bit of the internal pulp.
Step 6 : Fill the potatoes with the chorizo mixture, mixing it with the Edam and Pecorino cheeses.
Step 7 : Butter the stuffed potatoes with Yellow Butter and bake for 5 to 10 minutes.
Step 8 : Finally, sprinkle chopped parsley and cilantro on top before serving.
