Lettuce Tacos

Ingredients

4 Escarole lettuce leaves

1 Avocado

½ cup of Julienned purple cabbage

½ cup of Julienned red chili

½ cup of Julienned carrots

2 Lemons quartered

Cilantro leaves

1 tablespoon of Sesame seeds

1 pound of Fish fillet

1 tablespoon of Pear nectar

2 tablespoons of Lemon juice

1 teaspoon of Sesame oil

1 cup of Raw rice noodles

½ cup of Peanut

½ cup of Ketchup

½ cup of Vinegar

3 tablespoons of Sugar

¼ cup of Peach nectar

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Cut the fish into fingers or sticks and season with salt, pepper, lemon juice, pear nectar, and sesame oil.

Step 2 : In a hot skillet with a little oil, brown the fish and cook for a few minutes at medium temperature.

Step 3 : Then set aside.

Step 4 : Heat the oil to high temperature and add the raw rice noodles; they will puff up and turn white.

Step 5 : Quickly remove from the oil and let drain excess fat.

Step 6 : For the peanut sauce, blend all ingredients until well incorporated, then place the mixture in a pot and cook for 10 minutes over medium heat.

Step 7 : Set aside.

Step 8 : Arrange the open lettuce leaves on a tray and add in each leaf the chopped avocado, purple cabbage, red chili, carrot, cilantro leaves, along with the cooked fish and sesame seeds.

Step 9 : Serve with the fish sauce.
