Ingredients

1 Whole chicken

¼ cup of Orange juice

¼ cup of Sour orange juice

½ cup of Chopped onion

2 Chopped garlic cloves

1 Chopped green chili

Fresh mint sprigs

2 Ripe plantains

4 tablespoons of Yellow butter

10 Corn tortillas in pieces

½ cup of Chopped onion

12 Crushed garlic cloves

1 Red bell pepper

1 tablespoon of Achiote

4 Tomatoes

Preparation

Step 1 : Cook the whole chicken with onion, green chili, garlic, and salt, then shredded.

Step 2 : Meanwhile, blend the red bell pepper, onion, garlic, salt, pepper, cumin, tomato, achiote, and tortillas until obtaining a consistency similar to a thick atol.

Step 3 : In a skillet with Yellow Butter, sauté onion, green chili, and garlic.

Step 4 : Once the onion is translucent, add the shredded chicken and mix.

Step 5 : Then, add the previously blended mixture.

Step 6 : Cook over medium heat for 20 minutes, stirring constantly.

Step 7 : Add the mint sprigs, sour orange juice, orange juice, salt, and pepper.

Step 8 : Finally, the dish is ready to serve.
