Ingredients

1 pound of Pork loin

1 pound of Pork rib

1 pinch of Salt

1 pinch of Pepper

3 tablespoons of Oil

1 Large onion

1 Chili

2 Peeled garlic cloves

2 Carrots sliced

3 Large chopped potatoes

1 Chopped chayote

2 Chopped green bananas

3 Grated or blended tomatoes

1 tablespoon of Paprika

1 teaspoon of Ground cumin

1 tablespoon of Oregano powder

2 Laurel leaves

½ cup of White wine

2 cups of Water

¼ cup of Peas

2 Ripe plantains

Preparation

Step 1 : Wash the meats, cut into medium-sized pieces, add salt and pepper to taste, then refrigerate for 15 minutes.

Step 2 : After the time has passed, remove from the refrigerator.

Step 3 : In a pot with hot oil, place the meats and let them cook for 5 minutes until browned on all sides.

Step 4 : Meanwhile, finely chop the onion, garlic, and chili, and add them to the pot to cook for 5 minutes.

Step 5 : Add the carrots, potatoes, chayote, bananas, and tomatoes, along with paprika, cumin, oregano, salt, pepper, laurel, and pour in the wine.

Step 6 : Let cook for 3 minutes to evaporate the alcohol.

Step 7 : Then, add the two cups of water, cover the pot, and simmer for 35 minutes over medium-low heat, occasionally checking the water level to prevent burning.

Step 8 : When the vegetables and meats are tender, cut the ripe plantains and add them to the pot along with the peas, without stirring, and cook for 5 more minutes.

Step 9 : Adjust seasonings if necessary, remove from heat, and serve immediately this delicious Honduran casserole, accompanied by white rice and tortillas.
