Honduran-Style Pork and Beef Stew

Ingredients

2 pounds of Stewing beef

2 pounds of Pork for stewing

4 Bay leaves

2 tablespoons of Soy sauce

1 tablespoon of Mustard

2 tablespoons of Worcestershire sauce

2 teaspoons of Cumin

2 tablespoons of Ground oregano

2 tablespoons of Paprika powder

1 pinch of Salt

4 tablespoons of Oil

2 Onions

4 Bell peppers

2 Garlic cloves

1 cup of Chopped onion stems

¼ cup of Chopped cilantro

2 cups of Tomato puree

2 teaspoons of Vinegar

2 cups of Wine

2 Carrot

4 Potatoes

1 pinch of Pepper

Preparation

Step 1 : Cut the meat into medium cubes and place in a bowl.

Step 2 : Add bay leaves, soy sauce, mustard, Worcestershire sauce, cumin, oregano, paprika, salt, and pepper.

Step 3 : Mix everything and reserve in the refrigerator for 15 minutes.

Step 4 : Meanwhile, finely chop the onion, pepper, and garlic, and set aside.

Step 5 : After the meat has marinated, add oil to a pot and add the meat.

Step 6 : Sear for 2 minutes to brown all sides, then let cook over medium-high heat for an additional 5 minutes and remove.

Step 7 : In the same pot, sauté the chopped onion and garlic over medium heat for 1 minute in the juices released by the meat.

Step 8 : If needed, add another tablespoon of oil.

Step 9 : Add the pepper, onion stems, and sauté for 1 more minute.

Step 10 : Then add the cilantro and cook everything for 3 minutes.

Step 11 : Add the tomato puree, vinegar, and wine, and let it boil for 5 minutes.

Step 12 : Chop the carrot and potatoes, and add them to the pot once the sauce begins to thicken.

Step 13 : Add the meat, cover, and cook over medium-low heat for approximately 40 minutes, or until the meat is completely tender.

Step 14 : Finally, adjust the seasoning if necessary and serve this delicious stew hot.
