This dish is very easy to prepare. Stuffed chilies are very flavorful and provide a complete meal without requiring many ingredients.
It dates back to the fusion of Spanish and indigenous cuisine, and it is said to have become popular in Honduras during colonization. Today, it is an iconic recipe that reflects the country's cultural diversity.
Honduran Stuffed Chili Peppers
Ingredients
1 ½ pound of Ground beef
1 Finely chopped large onion
1 ½ Finely chopped chili
5 Crushed garlic
6 Medium green chilies
3 tablespoons of Olive oil
1 pinch of Salt
3 tablespoons of Tomato purée
2 teaspoons of Annatto (achiote)
2 teaspoons of Dried oregano
1 teaspoon of Cumin
2 teaspoons of Mustard
½ cup of Fine leaf cilantro
3 Finely chopped celery stalks
1 Large potato
½ pound of Mozzarella cheese
1 pinch of Black pepper
Preparation
Step 1 : In a skillet with two tablespoons of olive oil, sauté half a green chili, half an onion, and the crushed garlic for 3 minutes or until they turn golden.
Step 2 : Add the tomato purée, annatto, 2 cups of water, mix, and bring to a boil.
Step 3 : Season with salt, pepper to taste, add oregano, cumin, and finely chopped cilantro, then let it simmer covered on low heat for 20 minutes or until the sauce reduces sufficiently. Remove from heat afterward.
Step 4 : Pour the sauce into a blender and process for a few minutes at maximum speed. Set aside.
Step 5 : Meanwhile, sauté the remaining vegetables in a skillet with olive oil for 3 minutes, then add the ground meat and season with salt and pepper to taste; also add the finely chopped cilantro and cook for 5 minutes until everything boils.
Step 6 : Next, add 2 teaspoons of mustard, stir gently, and incorporate the chopped potatoes, cooking for 20 minutes until they soften.
Step 7 : Afterward, adjust the seasoning, turn off the heat, and set aside.
Step 8 : Meanwhile, cut the tops off the chilies, removing the stem and seeds with a sharp knife, rinse, and let drain.
Step 9 : To stuff them, fill to the top with the meat mixture, then place 1 tablespoon of the sauce and some mozzarella cheese of your choice on top.
Step 10 : Then, place them in a skillet with the previously made sauce and cook for 30 minutes over medium heat, covered.
Step 11 : Finally, remove from heat and enjoy these juicy stuffed chilies.
