This dish is very easy to prepare. The stuffed peppers are very flavorful and are a way to offer a complete meal without requiring many ingredients.
It dates back to the fusion of Spanish and indigenous cuisine, it is said to have become popular in Honduras during colonization. Today, it is an iconic recipe that reflects the country's cultural diversity.
Honduran Stuffed Chile Peppers
Ingredients
1 ½ pound of Ground beef
1 Finely chopped large onion
1 ½ Finely chopped chili pepper
5 Crushed garlic cloves
6 Medium green chilies
3 tablespoons of Olive oil
1 pinch of Salt
3 tablespoons of Tomato purée
2 teaspoons of Achiote
2 teaspoons of Dried oregano
1 teaspoon of Cumin
2 teaspoons of Mustard
½ cup of Finely shredded culantro
3 Finely chopped celery stalks
1 Large potato
½ pound of Mozzarella cheese
1 pinch of Pepper
Preparation
Step 1 : In a skillet with two tablespoons of olive oil, sauté half of a green chili, half of the onion, and the crushed garlic for 3 minutes or until golden.
Step 2 : Add the tomato purée, achiote, 2 cups of water, mix and bring to a boil.
Step 3 : Season with salt and pepper to taste, add the oregano, cumin, and finely shredded culantro, and simmer covered over low heat for 20 minutes or until the sauce reduces enough, then remove from heat.
Step 4 : Pour the sauce into a blender and process for a few minutes at maximum speed, then set aside.
Step 5 : Meanwhile, sauté the remaining vegetables in a skillet with olive oil for 3 minutes, then add the ground meat and season with salt and pepper; also add the finely shredded culantro and cook for 5 minutes until everything boils.
Step 6 : Next, add 2 teaspoons of mustard, stir gradually, and add the chopped potatoes, which cook for 20 minutes until tender.
Step 7 : Afterward, taste and adjust seasoning, turn off the heat, and set aside.
Step 8 : Meanwhile, cut the tops off the chilies, remove stems and seeds with a sharp knife, wash, and drain.
Step 9 : To stuff them, fill until overflowing with the meat mixture, then place 1 tablespoon of sauce and mozzarella cheese to taste.
Step 10 : Then, place them in the skillet with the previously prepared sauce and cook for 30 minutes over medium heat, covered.
Step 11 : Finally, remove from heat and enjoy these juicy stuffed chilies.
