Honduran Enchiladas

Ingredients

10 Tortillas

1 Cabbage

1 pound of Ground meat, either pork or beef

1 Large onion

1 Green chili

4 Boiled eggs, chopped into cubes

½ pound of Dry cheese or grated parmesan

Oil

4 Ripe red tomatoes

3 Garlic cloves

3 Boiled eggs

1 Large potato

½ Ripe plantain

teaspoon of Achiote powder

1 tablespoon of Olive oil (for the sauce)

Cumin

1 Cilantro bunch

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a large pot, cook the potatoes and eggs until tender, then cut into cubes and set aside.

Step 2 : In a skillet over medium-high heat, heat three teaspoons of vegetable oil.

Step 3 : Cook half of the chopped onion, garlic, tomato, chili, then add the meat.

Step 4 : Season with cumin, salt, and pepper to taste.

Step 5 : Set the mixture aside.

Step 6 : In a large pot with boiling water, place the tomatoes for 5 minutes, peel, and set aside.

Step 7 : In a blender, blend the cooked tomatoes, chili, onion, and cilantro.

Step 8 : Heat the mixture in a skillet with olive oil to create a sauce.

Step 9 : Fry the plantains and tortillas until golden, then drain on paper towels.

Step 10 : To assemble the dish, place the meat, cabbage, egg, plantain, potatoes, and tomato cubes on the tortilla.

Step 11 : Add sauce and sprinkle with grated cheese.
