Honduran Beef Salpicon
Ingredients
500 grams of Cooked and shredded beef
1 Large red onion, chopped
1 Red bell pepper, chopped
1 Green bell pepper, chopped
1 cup of Sweet corn
1 cup of Peas
1 cup of Shredded carrot
0.5 cup of Fresh cilantro, chopped
2 Lemons, juiced
Salt and pepper to taste
Tostadas or fried plantains to accompany
Preparation
Step 1 : In a large bowl, mix the shredded beef with the onion, peppers, corn, peas, carrot, and cilantro.
Step 2 : Then, add the lemon juice, salt, and pepper, and mix all the ingredients well.
Step 3 : It is important to let the mixture rest in the refrigerator for at least 1 hour so the flavors can blend properly.
Step 4 : Finally, serve the Beef Salpicon accompanied by tostaditas or fried plantains.
