Green Enchiladas
Ingredients
2 Avocado
1 Chorizo for grilling, chopped
2 Lemon
1 tablespoon of Orange juice
⅓ cup of Chopped cream cheese
3 Corn tortillas
Cilantro leaves
½ cup of Shredded red cabbage
1 tablespoon of White vinegar
⅓ cup of Chopped onion
⅓ cup of Chopped tomato
2 tablespoons of Olive oil
1 pinch of Salt
1 pinch of Black pepper
Preparation
Step 1 : To prepare the enchiladas, start by baking the corn tortillas at 350°F until crispy.
Step 2 : Meanwhile, prepare the guacamole by extracting the flesh from an avocado and mashing it with a fork.
Step 3 : Then, season with salt, pepper, orange juice, and lemon to taste, adding chopped tomato and onion.
Step 4 : Set this mixture aside for later.
Step 5 : In a skillet, cook the chopped chorizo until golden.
Step 6 : On the other hand, divide another avocado into three parts and slice thinly.
Step 7 : Also season the shredded red cabbage with salt, pepper, lemon juice, and vinegar, mixing well and setting aside.
Step 8 : To assemble the enchiladas, start by placing a layer of guacamole on the plate, followed by chopped cream cheese.
Step 9 : Then cover with the avocado slices, the golden chorizo, seasoned red cabbage, and garnish with cilantro leaves.
