This delicious Garden Rice is a perfect dish for any occasion, although it is more commonly prepared during Christmas celebrations. It contains a variety of ingredients to suit all tastes and makes a good accompaniment for any meal.
Garden Rice, along with potato salad and roasted pork leg, is often the typical Christmas dinner in many Honduran homes.
Garden Rice
Ingredients
1 ½ pound of White rice
1 Large red onion
2 Medium tomatoes
1 Medium carrot
Ground cumin to taste
Spices to taste
1 can of Corn
1 can of Peas
3 Large potatoes
1 Medium beetroot
1 Bunch of cilantro
3 Garlic cloves
1 Radish
3 cups of Water
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a pot, place the chopped onion, chili, tomatoes, garlic cloves, and cilantro bunch finely chopped into small pieces.
Step 2 : Then, add the 3 cups of water and 3 cups of rice, seasoning with salt, bouillon cube, ground cumin, and pepper.
Step 3 : Mix well so the rice is seasoned and add the can of corn and peas.
Step 4 : Cut the potatoes, carrot, beetroot, and radish into small cubes; add them to the pot with the other ingredients and cook for approximately 20 minutes, stirring occasionally to prevent the rice from sticking.
Step 5 : After 20 minutes, check that the rice is cooked and that the vegetables are tender.
Step 6 : Turn off the heat, allow to cool, and enjoy the delicious Garden Rice.
