Ingredients

2 pounds of Fish

2 tablespoons of Peach nectar

2 tablespoons of Orange juice

2 Lemons

2 tablespoons of Ground garlic

Cumin to taste

1 Yellow lemon

½ cup of Ground garlic

¼ cup of Fresh lemon juice

¼ cup of Olive oil

2 tablespoons of Pineapple juice

¼ cup of Diced pineapple

2 tablespoons of Chopped cilantro

1 tablespoon of Chopped parsley

Dried oregano to taste

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The fish are seasoned with salt, pepper, peach nectar, orange juice, lemon juice, ground garlic, and cumin, making sure to make grid-like cuts to intensify the flavor.

Step 2 : Then, they are stuffed through the open bottom with lime slices.

Step 3 : Next, place them on a baking tray and bake at 375°F for 35 minutes.

Step 4 : Once ready, set aside.

Step 5 : In a bowl, mix all the ingredients for the pineapple mojo, combining well and adjusting the seasoning to taste.

Step 6 : To serve, pour the baked fish with the pineapple mojo.

Step 7 : For a side dish, cooked or fried yuca, chips, or banana slices are recommended.
