Chilaquiles with Meat
Ingredients
½ pound of Ground beef
10 Corn tortillas
5 Cabbage leaves
1 Carrot
4 Cilantro sprigs
½ cup of Tomato paste
1 tablespoon of Mustard
2 tablespoons of Sour orange
Olive oil
Frying oil
1 tablespoon of Honey
1 teaspoon of Salt
½ cup of Water
1 teaspoon of Dried basil leaves
1 teaspoon of Cumin
1 teaspoon of Ginger
1 teaspoon of Black pepper
1 teaspoon of Oregano
1 teaspoon of Thyme
1 teaspoon of Chipotle chili
Preparation
Step 1 : Begin by rolling and chopping the cabbage leaves, then grate the carrot and chop the cilantro sprigs.
Step 2 : Once done, mix all these ingredients in a bowl and season with cumin, oregano, black pepper, and salt.
Step 3 : Add lime and vinegar, mix well, and refrigerate.
Step 4 : To prepare the spice mixture for the meat, sauté onions and garlic in oil, then add the spices and mix.
Step 5 : Next, add the ground meat, tomato paste, mustard, and sour orange.
Step 6 : Then, add water and bring to a boil for a few minutes, then add honey.
Step 7 : In another skillet, fry the tortilla strips until golden.
Step 8 : Once ready, place the tortillas, meat, and salad on a large plate.
Step 9 : You can add vinaigrette or sauce to taste.
Step 10 : Finally, enjoy these delicious chilaquiles with ground meat.
