Ingredients

1 Chicken cut into eight pieces

2 tablespoons of Olive oil

1 Chopped onion into squares

1 Chopped tomato into squares

½ cup of Potato wine

1 Bay leaf

½ cup of Water

1 Green or red sweet chili, chopped into squares

2 Garlic cloves

Salt and pepper

Preparation

Step 1 : In a skillet, add olive oil and brown the chicken on both sides.

Step 2 : Once browned, remove and set aside.

Step 3 : In the same skillet, sauté the garlic, onion, and green sweet chili.

Step 4 : When the sofrito is almost ready, add the tomato to give it some color.

Step 5 : Then, add the chicken back to the skillet and incorporate water, wine, bay leaf, salt, and pepper to taste.

Step 6 : Cover and cook over low heat for approximately 40 minutes.

Step 7 : Afterward, uncover and cook until the sauce thickens.
